5 Minute Bean Salad



This quick and easy bean salad is great as a side to your lunch or dinner, great as a party appetizer or eaten with chips. It takes about 5 minutes to put together and is delicious. I do recommend preparing it in advance as it is better the second day.


1 Can Red Kidney Beans-Drained and Rinsed

1 Can Garbanzo Beans- Drained and Rinsed

1/4 -Red Bell Pepper- Diced

1/2 Red Onion- Diced

1 Stalk of Celery- Chopped

1/4 cup Red Wine Vinegar

1/4 cup EVOO

Dried Oregano to taste

Dried Basil to taste

Salt and Pepper to taste



First, empty your two cans of beans into a strainer and rinse until the water runs clear.


Next start to prepare your other ingredients. I usually make them pretty small for an easier bite with the beans.


Add all of the ingredients together and mix with the red wine vinegar and EVOO. Season with dried oregano, dried basil, salt and pepper- mix again and enjoy!
