Crispy Keto Chicken Fingers




These are one of my favorite Keto fast food alternatives!


What is better than extra crispy chicken fingers and not feeling bad about eating them? Nothing!


These are very simple to make and they'll be done in 20 minutes!


First, you will want to get all of your ingredients together.

I usually start out with cutting my chicken into strips. I prefer to use a thinner breast, but you can use anything you'd like. Once you have all of the chicken sliced, put it to the side and start mashing your pork rinds. You can either mash them with your hands, in the bag, in a bowl with a fork or blend them. You will want the pork rinds to have some structure for the crunch. Add in almond flour and seasonings of your choice to the pork rinds and mix. Next, in a separate bowl - beat two eggs.


Now you have two options: you can either bread all of the chicken fingers prior to frying or you can coat them as you go ( this is what I do).


Start the stove and heat up your oil. Take a bit of water on your fingers and flick it at the oil to determine if it is hot enough to fry. If the oil is hot enough, it will crackle when splashed with the water.


Cook the chicken on one side until it is almost completely cooked and then flip. Leave it on this side until desired crunchiness.


My go to sauces to use with these are:

Franks Buffalo Sauce and Blue Cheese

1lb Chicken breast

1/4 cup almond flour

1/2 cup pork rind mash

2 eggs

Ground Pepper

Parsley

Paprika

Garlic Powder
